Sunshine Smoothy

Ingredients:

  • 1 large carrot, peeled, trimmed and cut into large chunks
  • +/- 1 cup fresh or frozen pineapple
  • 1 peeled Sumo orange (or any other type you like)
  • ½ banana
  • 1/3 cup almond, soy or other non-dairy milk
  • small chunk peeled ginger (use more or less to taste)
  • ¼ tsp ground turmeric (optional)
  • Handful of spinach (optional)
  • 1 Tablespoon ground flax (optional)

Directions:

lace all ingredients in a high speed blender and blend until smooth.  If using fresh pineapple, add 1-2 ice-cubes.

  • Note: the ginger and turmeric will give this smoothie a lovely spiciness to it.  Don’t shy away from using these highly anti-inflammatory ingredients.  The flavor is different, but really tasty.
  • Another note: the optional spinach will add a boost of iron, vitamin K and good protein to your smoothie but the color will not be as pretty and bright.
  • Hint: to save time on busy mornings, place all ingredients in a bowl or in the blender jar the night before and store in fridge until ready to blend.


And there you have it, sunshine on a dreary day.
