Arugula Smoothie
Ingredients:
1 cup frozen pineapple
½ to 1 banana
2 large handfuls of baby arugula
1 cup raw coconut water
1 TBS raw almond butter (or roasted if raw is not available)1 TBS ground flax seeds
Directions:
Place all ingredients in a high speed blender and blend until smooth. If using fresh pineapple, add 1-2 ice-cubes. Your smoothie will be a beautiful vibrant green color.
Note: Arugula is a cruciferous vegetable and is loaded with antioxidants that may protect against diseases like cancer. Arugula is also anti-inflammatory and is loaded with Vitamin K which is good for your heart and your bones. The flavor may be slightly bitter and tangy, but in this smoothie it is strangely, really tasty.
Hint: to save time on busy mornings, place all ingredients in a bowl or in the blender jar the night before and store in fridge until ready to blend.
And who would have thought? It is delicious!
