Sweet Dijon Balsamic Dressing

Ingredient:

  • 1/4 cup walnuts
  • 1/4 cup water
  • 1/4 cup balsamic vinegar
  • 2 Tablespoons maple syrup
  • 1 ½ teaspoons Dijon mustard
  • 1 - 2 cloves garlic, pressed (optional)
  • 2 Tablespoons chopped red or green onion (Optional)
  • 2 Tablespoons pine nuts
  1. Blend walnuts to a fine powder.
  2. Add remaining ingredients except for onions and pine nuts to blender and blend to a smooth creamy consistency.
  3. Stir in onions, if using. 

 

Use as a salad dressing or pour over lightly steamed vegetables such as asparagus, broccoli, green beans or zucchini. Top with pine nuts.
