Sweet Dijon Balsamic Dressing
Ingredient:
- 1/4 cup walnuts
- 1/4 cup water
- 1/4 cup balsamic vinegar
- 2 Tablespoons maple syrup
- 1 ½ teaspoons Dijon mustard
- 1 - 2 cloves garlic, pressed (optional)
- 2 Tablespoons chopped red or green onion (Optional)
- 2 Tablespoons pine nuts
- Blend walnuts to a fine powder.
- Add remaining ingredients except for onions and pine nuts to blender and blend to a smooth creamy consistency.
- Stir in onions, if using.
Use as a salad dressing or pour over lightly steamed vegetables such as asparagus, broccoli, green beans or zucchini. Top with pine nuts.
